PIZZA RICE CASSEROLE
 

2 c. cooked brown rice
1/2 lb. extra lean ground beef
1 chopped onion
2 (8 oz.) cans unsalted tomato sauce
1/4 tsp. garlic powder
1 tsp. sugar
Pepper
1/4 tsp. oregano
1 tsp. parsley
1 1/2 c. low fat cottage cheese
1/2 c. low fat cheese (Mozzarella, for example)

Preheat oven to 325 degrees. Brown beef and onions. Drain fat. Add tomato sauce and spices. Cover and simmer for 15 minutes. Combine cottage cheese and rice. Put 1/3 of rice mixture in lightly oiled casserole dish. Top with 1/3 of meat mixture. Continue to alternate layers, ending with meat mixture. Top with grated cheese and bake 30 minutes until hot and bubbly. Delicious, low in fat and calories.
