4 pork chops 1/2 c. flour 1/2 tsp. salt 1/4 tsp. pepper 1/2 c. uncooked rice 2 c. stewed tomatoes 2 tbsp. chopped onion 2 tbsp. cooking oil 2 tbsp. chopped green pepper 1 tsp. salt 1/4 tsp. pepper Trim fat and bone from pork chops. Stir together flour, salt, and pepper; roll chops in flour mixture to coat, and brown in skillet in hot oil. Combine rice, tomatoes, onion, oil, green pepper, salt, and pepper; pour over chops in skillet. Cover and simmer for 45 minutes. Do NOT lift lid during cooking. Serve with rice or noodles. |
