Rinse rice, add only 2 teaspoon olive oil to prevent sticking, Use chicken broth instead of water. Boil, then simmer 20 minutes in a separate pan. Add remaining ingredients (except chicken). Simmer 20 minutes; add 2 more teaspoon olive oil. Sauté chicken; cook just about 10 minutes (or until chicken is opaque) turning once, then add to cooked rice mixture and serve.
