PINA COLADA BREAD PUDDING
 

3 slightly beaten eggs
1 (3 oz.) pkg. cream cheese, softened
1/2 c. packed brown sugar
3 c. dry whole wheat bread cubes (about 4 slices)
1 (8 1/4 oz.) can crushed pineapple (juice packed)
1 c. coconut
1/2 c. milk
1/2 c. whipping cream (opt.)
2 tsp. rum (opt.)

In large mixing bowl combine eggs, cream cheese, and brown sugar. Stir in bread cubes, undrained pineapple, coconut and milk. Place in a greased 10"x6"x2" baking dish. Bake at 325 degrees for about 30 minutes or until knife comes out clean when inserted near center. Remove to wire rack and cool slightly. To serve in a small mixer bowl beat cream and run on low speed of an electric mixer until stiff peaks form. Serve with warm pineapple mixture. 8 servings.
