HOMEMADE BANANA PUDDING
 

1 1/4 c. sugar
Pinch of salt
1/2 c. flour
3 lg. egg yolks, beaten (save the whites)
3 c. sweet milk
1/2 tsp. vanilla
1 box vanilla wafers
5 lg. bananas

MERINGUE:

3 egg whites
1/4 c. sugar
Pinch of salt

In top of double boiler, combine sugar, salt and flour. Stir in egg yolks gradually add milk. Cook, stirring constantly over medium heat until mixture becomes slightly thickened. Remove from heat stir in vanilla and set aside. Line the bottom of a glass baking dish with vanilla wafers. Add a layer of sliced bananas. Spoon a layer of pudding over wafers and bananas. Repeat layers. After using all the pudding, end with a layer of vanilla wafers. Top with meringue.

Meringue: Beat meringue ingredients until stiff. Spread over banana pudding. Bake at 400 degrees until golden brown.
