BREAD PUDDING
 

6 slices day old bread
2 tbsp. + 1/2 c. sugar
1 tsp. cinnamon
4 eggs
2 c. milk
2 tbsp. melted butter
1/2 c. seedless raisins
1 tsp. vanilla extract

Break bread in small pieces in baking dish (about 1 1/2 quart size). Sprinkle cinnamon over bread and add raisins and melted butter. Toast lightly bread mixture in oven about 350 degrees. Then add mixture of eggs, sugar, milk and vanilla extract, after mixing well. Bake about 30 minutes or until solid. Serves about 8.

RUM SAUCE:

2 c. milk
1/2 stick butter
1/2 c. sugar
1 tbsp. nutmeg
1 tbsp. vanilla extract
Rum to taste

Place milk, butter and sugar in saucepan; let come to a boil, thicken with a roux made of 2 tablespoons flour and 1 tablespoon oil. Remove from fire, add nutmeg, vanilla and rum to taste. Serve over pudding.
