GRANDMA'S HOMEMADE BUNS
 

2 c. milk
2 pkgs. dry yeast
1/2 c. warm water
1/2 c. sugar (scant)
8 tbsp. lard
2 tsp. salt
2 eggs
6 to 7 c. flour (as needed)

In mixing bowl, dissolve yeast in warm water, warm milk, and add to yeast mixture. Add sugar, lard, salt, eggs, and 1/2 flour. Beat with spoon until smooth and batter falls from spoon in "sheets". Mix in enough remaining flour until dough cleans bowl. Turn onto lightly floured board. Cover; let rise 10 to 15 minutes. Knead until smooth (10 to 15 minutes). Pound up in greased bowl with greased side up. Cover with cloth. Let rise in warm place (85 degrees) until double (about 1 hour). Punch dough down, let rise again until almost double (about 30 minutes). Shape into buns; place on greased cookie sheet and let rise and bake in (hot oven - 425 degrees) 8 to 10 minutes. Makes 30 to 32 buns.
