1 c. flour 1 tsp. cinnamon 1/2 tsp. nutmeg 1/2 tsp. salt 2 tsp. baking powder 1/4 tsp. baking soda 1 c. quick cooking oatmeal 8 oz. tofu 2 eggs 1/4 c. oil 1/2 c. dark brown sugar Sift dry ingredients into bowl. Stir in 1 cup oatmeal. Blend together until smooth tofu, eggs, oil and sugar. Pour into flour mixture; mix well. Bake at 425 in greased muffin tin about 15 minutes. Makes approximately 12 muffins. |
