PEAR GINGER BRAN MUFFINS
 

1 1/2 c. Bran Nugget cereal
1/2 c. pear or apple juice
1 pear, parsley shredded
2 tsp. ginger
1/2 c. nonfat yogurt
1/4 c. pear or apple butter
1/4 c. maple syrup
2 egg whites, slightly beaten
1 tbsp. oil (I don't use)
1 1/4 c. whole wheat flour
2 tsp. soda
1 tsp. cinnamon

1. In medium bowl combine the cereal, juice, pear and ginger. Let soak for 10 minutes. Stir in yogurt, pear or apple butter, syrup, egg whites and oil.

2. Combine flour, soda and cinnamon.

3. Pour liquid ingredients over the flour mixture. Stir with spatula to moisten flour mixture, don't over mix.

4. Place muffin liners in muffin pan and fill 2/3 full with batter.

5. Bake at 400 degrees for 18-20 minutes. Makes 12. It is very low in cholesterol and fat and that's important to many of us these days. These muffins go well with breakfast or as a snack. Enjoy.
