1 3/4 c. flour 2/3 c. sugar 2 tsp. baking powder 1/4 tsp. baking soda 1/2 tsp. salt 1/2 c. softened butter 2 ripe bananas, mashed 2 eggs 1 c. peanut butter GLAZE: 1 1/2 c. powdered sugar combined with 3 tbsp. milk In a large bowl, combine dry ingredients. In another large bowl combine wet ingredients. Add flour mixture, stirring until just combined. Pour into muffin cups or loaf pan (makes 6 jumbo muffins or 1 large loaf). For jumbo muffins, bake 30 minutes, for loaf bake 1 1/2 hours or until toothpick inserted in center comes out clean. Cool in pan on wire rack for 5 minutes. Remove bread and cool completely on wire rack. Can freeze, tightly wrapped for up to one month. Before serving, prepare glaze and drizzle over muffins or loaf. |
