2 c. flour
6 oz. cream cheese
1/2 lb. (2 sticks) butter
1 c. finely chopped nuts
1 1/2 c. brown sugar
3 eggs
3 tsp. vanilla
Beat together cream cheese and butter. Add flour. Mixture will be very dry. (I use my hands to mix.) Divide mixture into 48 balls of dough. Place balls in miniature muffin baking pans and spread evenly to line bottom and sides up to top of pan.
Mix together sugar and nuts. Add eggs and vanilla. Fill each pre-molded crust 3/4 way full. Bake in 375 degree oven 25-30 minutes until slightly brown. Makes 4 dozen.
