BANANA NUT MUFFINS
 

1 3/4 c. all-purpose flour
1/4 c. sugar
2 1/2 tsp. baking powder
3/4 tsp. salt
1 beaten egg
1/2 c. milk
1/3 c. cooking oil
1 c. mashed banana
1/2 c. chopped nuts

In large mixer bowl stir together flour, sugar, baking powder and salt. Make a well in the center. Combine egg, milk and oil. Add egg mixture all at once to flour mixture. Stir just until moistened, batter should be lumpy. Add banana and nuts. Grease muffin cups; fill 2/3 full. Bake in 400 degree oven for 20 to 25 minutes or until golden. Remove from pans, serve warm. Makes 10 to 12.
