Preheat griddle. In mixing bowl, beat eggs; beat in milk and oil. Add remaining ingredients. Beat only until large lumps disappear. If necessary, thicken with flour or thin with milk. Pour onto lightly greased, hot griddle. Cook until bubbles form and edges are cooked. Flip and cook until middle is done.
Banana Pancakes: Place 4 to 5 slices of bananas on each pancake, pressing into batter.
