2 c. unsifted all-purpose flour 1/3 c. sugar 1 tsp. salt 1 tsp. baking soda 1 1/2 c. uncooked quick cooking rolled oats 1 c. whole bran cereal (bran or wheat germ) 1/2 c. raisins or chopped dried prunes or apricots 2 eggs, lightly beaten 1 1/3 c. buttermilk 1/2 c. light molasses Preheat oven to 350 degrees. In a mixing bowl, combine the flour, sugar, salt, and baking soda. Stir in the oats, bran cereal, and raisins. Combine the eggs, buttermilk, and molasses. Add to the dry ingredients and stir until the dry ingredients are moistened. Spoon the batter into greased 2 inch muffin cups, filling each cup 2/3 full. Bake for 15 to 20 minutes or until toothpick inserted into a muffin comes out clean. Makes approximately 12 muffins. |
