2 c. mango pulp
2 tsp. baking soda
3/4 c. salad oil
1 tsp. cinnamon
3 eggs
1/3 tsp. salt
1 1/4 c. sugar
1 c. chopped walnuts
2 c. flour
1. Beat pulp, oil, eggs, and sugar on low speed for 2 to 3 minutes.
2. Sift flour, soda, cinnamon, and salt together.
3. Combine 1 and 2 and stir until blended. Add nuts.
4. Pour into greased and floured loaf pan.
5. Bake at 350 degrees about 1 hour until done.
Optional: 1/2 cup raisins, 1/2 cup shredded coconut (may omit nuts).
