1 c. Kellogg's All Bran (or other bran cereal) 1 c. skim milk 1 egg 1/2 c. oil (or less) 1/2 c. brown sugar (or less) 1 c. flour (whole wheat, if desired) 1 tsp. baking powder 1 tsp. baking soda 1/3 c. raisins (if desired) 1/3 c. nuts (if desired) Combine skim milk and cereal and let stand about 10 minutes to soften. Add egg and oil and mix. Add dry ingredients, raisins and nuts. Bake in a 425 degree oven for 15-20 minutes or until done. Makes 12 muffins. |
