HONEY BRAN MUFFINS WITH STREUSEL
TOPPING
 

In a large bowl, combine: 1/2 c. honey 1/4 c. molasses 2 tbsp. oil 1 egg 3/4 c. buttermilk

In another bowl, combine: 1 c. white flour 1 1/4 tsp. soda 1/2 tsp. salt 1/2 tsp. cinnamon 1 apple, grated

Mix dry ingredients with liquid ingredients just until dry ingredients are moistened; do not over mix. Put in paper-lined muffin tins about 3/4 full. Sprinkle Streusel Topping on each.

STREUSEL TOPPING:

1/4 c. brown sugar
2 tbsp. flour
1/2 tsp. cinnamon
2 tbsp. butter

Combine with a pastry blender. Bake at 350 degrees for 20 minutes. Makes 16 muffins.
