MINI-ORANGE MUFFINS
 

Rind and juice of 2 oranges
2 1/2 c. sugar
Juice of 2 lemons
Yellow, lemon or pineapple cake mix

Glaze: Mix and refrigerate overnight first 3 ingredients.

Muffins: Preheat oven to 350 degrees. Prepare cake mix according to package directions. Fill muffin (mini) pans 1/2 full and bake until done. Stir glaze well and continuously. Immerse mini-muffins in glaze. Remove immediately. Makes approximately 106 mini-muffins.
