BRITISH BANNOCKS
 

According to Druid belief you always stir the batter from East to West, the way the sun travels, to make them as good as they should be.

1/2 c. rolled oats (quick or regular)
1 tsp. baking powder
1 tbsp. granulated sugar
1/4 tsp. cinnamon
2 eggs
1 c. milk
1/2 c. currants or raisins or chopped nuts or any dried fruit

Combine dry ingredients and mix well. Combine eggs and milk; beat until frothy. Then add to the dry ingredients. Then add fruit or nuts; mix well.

Spoon about 2 tablespoons of batter onto a lightly greased hot griddle. When many bubbles appear on top, turn over and cook on the other side until done through the center.

Makes about 12 (3 inch) bannocks.
