1 c. butter 2 pkg. Jiffy cornbread mix (Mexican) 1 med. onion, diced 4 eggs, beaten 1 (10 oz.) container cottage cheese 1/4 c. green chili (for a chili taste, if desired) Mix eggs, cheese, onion, and broccoli with 3/4 cup melted butter. In a 9x12 inch baking pan, melt 1/4 cup butter until the pan is hot. Then add rest of ingredients and beat well. Pour into HOT baking pan. Bake at 350 degrees for 1 hour. Should be firm when done. |
