BLUEBERRY BANANA BREAD
 

1 c. whole wheat flour
3/4 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. cinnamon
1/4 tsp. salt
1/2 c. quick cooking rolled oats
3 tbsp. butter
1/3 c. sugar
1 egg
1 c. bananas, mashed
1 tbsp. lemon juice
1 c. blueberries (fresh or frozen)

Preheat oven to 350 degrees and lightly grease 8 1/2 x 4 1/2-inch loaf pan. Mix flour, baking soda, salt and cinnamon. Stir in oats and set aside. Cream butter and sugar. Whip in egg; add bananas and lemon juice. Stir until blended. Fold in blueberries. Add dry ingredients and mix until just moistened. Pour batter in loaf pan and bake for about 1 hour. Let bread cool in pan for 10 minutes. Turn out on wire rack to cool. Wrap and refrigerate several hours before slicing.
