2 whole boneless, skinless chicken breasts (about 1 lb.) 1 tbsp. lemon juice 2 c. seedless grapes 2 scallions, thinly sliced 1/2 c. coarsely chopped walnuts 1/4 c. mayonnaise 1/4 c. plain yogurt 1 tsp. curry powder Leaf lettuce Cook chicken - sprinkled with lemon juice - (can be microwave). Chill and cube. Combine all ingredients and gently fold. Arrange lettuce and salad. Serves 4. |
