4 chicken breasts, cooked & cut into lg. pieces Cook together until partially done: 1 c. diced celery 1 lg. diced onion 1 lg. diced carrot 1 can sliced water chestnuts 1 pkg. Chinese or Japanese vegetables 1 c. partially cooked rice 1/2 can slivered almonds (optional) 1 can cream of celery soup 1 c. chicken broth (thickened) Layer in casserole: chicken, rice, vegetable mixture and soup. Repeat layers. Grate cheese of choice on top. Bake at 400 degrees for 20 minutes. NOTE: If you cover chicken breasts with bacon slices it bastes itself. |
