1 pkg. frozen pea pods 1 lb. chicken breasts, boneless and skinless 3 green onion 4 oz. fresh mushrooms, sliced 2 tbsp. peanut oil 1/4 c. peanut oil SAUCE: 1/4 c. soy sauce 2 tbsp. sherry 2 tbsp. orange marmalade 2 tsp. cornstarch 1/2 tsp. ginger 1/8 tsp. cayenne pepper Dice chicken and put in sauce mixture. Stir fry onions and mushrooms in 2 tablespoons oil. Remove from pan. Add 1/4 cup oil. When hot, add chicken and liquid. Stir fry until chicken is cooked. About 1/2 way through, add onion and mushroom mixture and pea pods. Serve over cooked rice. |
