CHICKEN PICANTE
 

1 c. med. taco sauce
1/4 c. Dijon mustard
1/4 c. fresh lime juice
4 chicken breasts, boned & skinned
2 tbsp. butter
1 tbsp. chopped cilantro
4 tbsp. plain yogurt, divided
1 lime peeled & divided into 4 segments, membrane removed

Mix taco sauce, mustard and lime juice. Add chicken and marinate 30 minutes - 8 hours. Remove chicken from marinade. Melt butter in large skillet over medium heat until foamy. Brown chicken, cook until done. Add marinade and cook 5 minutes longer or until fork can be inserted with ease and marinade is slightly reduced and beginning to glaze. Be careful not to overcook breasts. Remove chicken to warmed serving platter.

Raise heat to high and boil marinade 1 minute. Pour over chicken. Sprinkle cilantro over chicken. Place 1 tablespoon yogurt on each breast half and top each with lime segment. Garnish with cilantro.
