CURRIED CHICKEN CASSEROLE
 

2 c. fresh broccoli flowerets
2 lg. chicken breasts
1 c. sharp cheddar cheese, shredded
3/4 c. dry bread crumbs

SAUCE:

1 c. cream of chicken soup
1/2 c. mayonnaise
1/2 tsp. lemon juice
1 tsp. curry powder
1/2 tsp. hot sauce (optional)
Salt & pepper to taste

Boil chicken in water until tender. Remove skin and cut into 1-inch chunks. Blanche broccoli and place in bottom of a large baking or casserole dish (approximately 9 x 12). Place chicken amid broccoli.

Combine sauce ingredients and spoon over chicken and broccoli. Cover with cheese, then bread crumbs.

Bake at 350 degrees, uncovered, for 30 minutes.

Optional: Water chestnuts may be added to chicken and broccoli.
