1 pkg. lasagna noodles 1 can lasagna sauce 1 packet cheese 1/2 c. chopped onion 1/2 c. chopped green pepper 1/4 c. butter 1 1/2 tsp. basil 1/2 c. or more cottage cheese 2 whole med. sized boneless chicken breasts, diced (about 1 c.) Cook the lasagna noodles; drain when done. Meanwhile, saute in the butter the diced chicken breasts until they turn white. Add the onions and peppers and saute more. Finally add the basil and remove from heat. Add to the mixture the cottage cheese. Grease a 2 quart oblong casserole or spray with Pam. Layer half the noodles on bottom and put a very thin layer of the sauce from the can. Put all of the stir-fry mixture over this and put another layer of the sauce next. By now you have used 1/2 of the sauce from the can. Put the rest of the noodles, then the balance of the sauce. Sprinkle the cheese all over top and bake at 350 degrees for 25 minutes. |
