3/4 c. mayonnaise 3/4 c. golden raisins 1 tbsp. curry powder 2 tbsp. lemon juice 4 c. cooked chicken, cut into sm. pieces 1 c. cooked brown rice 1 green onion, sliced 1/4 c. roasted peanuts 1/2 c. shredded coconut (optional) Combine mayonnaise, 2 tablespoons raisins, curry powder and lemon juice in food processor. Puree until smooth. Place chicken, rice, remaining raisins and green onion in large bowl. Toss with dressing. To serve: Arrange salad on platter and sprinkle with peanuts and coconut. Serves 6. |
