CHICKEN PEACH CURRY
 

1 lg. chicken, cut up
1 can peaches
1 tbsp. parsley, chopped or dried
1/2 tsp. curry powder or more if desired
Salt & pepper to taste
Dash of garlic powder
Recipe of your favorite rice

Skin the chicken and remove the fat. Drain the peaches and reserve the liquid. You may cook this on the range top or in the oven.

If cooking on the range top, brown the chicken lightly in a small amount of oil. Mix the curry powder, salt, pepper, garlic powder and parsley with the peach juice. Add to the skillet and simmer the chicken until done. Stir in the peaches and heat through. Serve over rice.

For oven cooking, preheat oven to 350 degrees. Bake chicken, covered for about 10 minutes. Mix the spices with the peach juice as above. Pour over the chicken, cover and return to the oven. Cook until done. Stir in the peaches and heat through. Serve over rice.
