CHICKEN IN PHYLLO DOUGH
 

1 lb. box phyllo dough
Melted butter
4 skinned and boned chicken breast halved to 8 pieces
8 oz. pkgs. garlic and herb cream cheese
Fresh spinach leaves

Flatten each chicken piece as much as possible. Defrost phyllo dough (according to directions). Keep dough covered with damp cloth. Salt and pepper chicken breast. Use three sheets of phyllo dough. Butter each one before placing the next sheet on top. Cut sheets of dough in half. Place chicken on each half (1 piece). Spread 1 tablespoon garlic and herb. Cream cheese on top of chicken. Top with 2 to 3 spinach leaves. Roll up chicken breast into package, tucking sides of dough in as you roll. Place on cookie sheet seam side down. Brush with butter, cover with foil and freeze. Bake frozen 30 to 45 minutes at 350 degrees. Great company dinner to fix ahead.
