CHICKEN AND DUMPLINGS
 

Preparation time: 5 to 10 minutes. Cooking time: 2 to 2 1/2 hours. Serves 4 to 6. 1 med. onion, studded with 3 whole cloves 3 celery tops 1 carrot, sliced 2 bay leaves 1 tbsp. salt 3 c. hot water

In an 8 quart saucepan, boil chicken and giblets. Add remaining ingredients. Reduce heat. Simmer 2 to 2 1/2 hours. Discard onion, celery and bay leaves.

DUMPLINGS:

Preparation time: 5 to 10 minutes. Cooking time: 20 minutes.
1 1/3 c. flour
2 tsp. baking powder
1 tsp. chopped parsley
1/2 tsp. salt
2/3 c. milk
2 tbsp. oil

Stir flour, baking powder, parsley and salt until mixed. Combine milk and oil. Stir into flour until soft dough forms. Drop by heaping tablespoons into chicken pan. Cook uncovered 10 minutes. Cover and cook 10 minutes more. Remove dumplings. Spoon chicken into serving dish. Top with dumplings.
