2 lbs. chicken liver 1 tsp. curry powder 1 tsp. cayenne pepper 3 tbsp. oil 1 tsp. salt 1 1/2 tsp. ground garlic 2 tsp. ground ginger 1/8 tsp. ground cinnamon 1/4 tsp. ground allspice 1/8 tsp. ground cloves Wash the liver clean and add oil, salt, garlic, ginger, curry powder, cayenne pepper; mix well and put in a pan and cover it with a lid and lower the flame. Let it cook for a while and mix them very gently so that the pieces will not get mashed or broken. Do not mix it too often. When the water is all evaporated (usually they cook good by then if proper precautions are taken). Add cinnamon, allspice, clove and start frying very carefully so that it won't get scorched. The pieces should be very dry, considerably crisp. |
