LOW-CALORIE LEMON-TARRAGON CHICKEN
 

2 broilers, approx. 2 1/2 lbs. each, cut up
Juice of 2 lemons (1/3 - 1/2 c.)
Minced garlic or garlic powder
Tarragon, to taste
Pepper, to taste
Paprika, to taste

Remove skin from chickens. Arrange chicken pieces in a flat pan lined with a large sheet of heavy duty aluminum foil. Pour lemon juice over chicken. Sprinkle with spices. Cover with foil. Bake at 375 degrees for 1 1/2 hours. Serve with rice. Serves 8.
