GRILLED CHICKEN WITH APPLE MINT SALSA
 

1 red delicious apple
3 tbsp. fresh mint (chopped)
2 tbsp. apricot jam
1 jalapeno (diced) (optional)
Olive oil
1 golden delicious apple
2 tbsp. cider vinegar
1 tsp. lemon juice
6 chicken breasts (skinned)
Salt and pepper

Chop cored apples into 1/4 inch pieces. Toss with mint, vinegar, jam, lemon juice and jalapeno (if desired). Rub chicken with olive oil and season with salt and pepper. Grill or broil until cooked through. Serve each chicken breast with 1/2 cup salsa. Serves 6.
