CHICKEN CURRY CASSEROLE
 

2 tbsp. butter
1/2 med. onion, chopped
1 can cream of mushroom soup
1/3 c. Swiss cheese, shredded
1 can French style string beans, drained
1 1/4 c. milk
3 1/2 or 4 c. chicken, cooked & cut in bite-size pieces
1/2 c. bread crumbs or cereal crumbs
2 tbsp. butter, melted
2 tbsp. curry powder

Cook onion in 2 tablespoons butter until soft. Add soup, milk, curry powder and half the cheese. Blend and cook until cheese melts. Salt and pepper to taste. Mix chicken and string beans, and place in a buttered casserole dish. Pour soup mixture over top. Place the rest of the cheese and crumbs on top. Drizzle the melted butter over the top and dust with paprika. Bake at 425 degrees for 20 minutes, or until bubbly and crumbs are slightly brown. Makes 5 to 6 servings.
