CHICKEN IN GARLIC SAUCE
 

1 1/2 lbs. boneless chicken
4 oz. butter
3 tbsp. soy sauce
2 tbsp. lemon juice
2 tbsp. garlic powder
1 sm. onion
6 to 8 oz. mushrooms, cut or chopped
Dash of oregano
Dash of parsley
5 cloves garlic (cut sm. or pressed)
Paprika for color
Salt & pepper to taste
2 tbsp. bread crumbs

Preheat oven to 350 degrees. Cut chicken into small pieces. Wash thoroughly then cover generously with garlic powder. Place in shallow baking dish. Add butter, lemon juice, garlic, onion, mushrooms, salt, pepper and soy sauce. Very lightly sprinkle with dash of oregano and parsley. Generously cover with paprika.

Bake for approximately 15 minutes, then turn chicken over and separate pieces if stuck together. Add more butter if necessary. Add bread crumbs and cover with more paprika. Bake 15 minutes more or until chicken browns. Serve over rice or noodles. Serves 4.
