CHICKEN PAPAYA
 

2 tsp. oil
1 clove garlic, chopped
1 med. onion, sliced
1 inch ginger, sliced thin
2 1/2 lbs. chicken, cut into sm. pieces
1 1/2 qts. water
3 sm. green papayas, peeled and sliced 1 inch thick
1-2 tsp. salt or patis

Heat oil in wok and saute garlic, onion, and ginger until brown. Add chicken and stir-fry for 5 minutes. Add the water and simmer for 20 minutes, then add papaya and cook until tender.
