Amounts of Dijon and honey can be added according to taste.
Heat skillet (non-stick preferred) over medium high heat. Add chicken strips, stir-frying quickly, just until done, about 4-5 minutes. Reduce heat.
To make the sauce: Mix Dijon and honey. Pour over chicken and simmer over low heat about 5 minutes uncovered to blend flavors into chicken, stirring frequently. Serve immediately.
