CHICKEN PARMESAN
 

2 lg. boneless chicken breasts, split (about 1 1/2 lbs.)
2 sm. cloves garlic, peeled, mashed
1/2 stick butter
1/3 c. dairy sour cream
1/3 c. freshly grated Parmesan cheese
Dash of paprika
Lemon slices (optional)

(Mix Parmesan cheese with 1/2 teaspoon salt and 1/8 teaspoon freshly ground black pepper).

Pound chicken breasts slightly to flatten. Heat garlic in butter to melt. Cool slightly. Mix half garlic butter with sour cream. Cover each breast generously on all sides with sour cream mixture. Roll in seasoned Parmesan cheese. Place each chicken piece in foil lined baking dish. Sprinkle with paprika for color.

Bake uncovered in preheated 375 degree oven 25 to 30 minutes. Baste often with remaining garlic butter. During last 5 minutes run under broiler to brown cheese. Serve piping hot, garnished with lemon wedges if desired.
