GRANDMA'S CHICKEN SOUP
 

1 soup (stewing) chicken, 4-5 lbs.
3 1/2 qts. water
2 onions, sliced
1 tsp. salt
3 stalks celery
1 parsley root
2 carrots, diced
2 sprigs dill
3 sprigs parsley

Clean chicken and combine in deep pan with water and onions. Bring to boil and cook over medium heat 1 1/2 hours. Add remaining ingredients. Cover and simmer 90 minutes, or until chicken is tender. Remove chicken and strain soup. Serve soup and follow up with chicken and whatever vegetables you desire. Serves 6. This is especially good with chilled dry white wine.
