CHICKEN BREAST SCAMPI
 

2-3 lb. boneless chicken breasts (Market Day's work great!)
1/2 lb. butter
4 cloves garlic, minced
2 whole scallions, minced
1 tbsp. parsley, chopped
1/2 tsp. fresh dill (or 1/4 tsp. dried)
1/2 tbsp. oregano
1/2 tsp. salt
1/2 tsp. pepper

Preheat oven to 350 degrees. Cut raw, boneless chicken breasts into approximately 2 ounce chunks (like huge shrimp) and place in 9 x 13 baking dish. Melt butter in a saucepan over low heat; add remaining ingredients. Cook over low heat for 2 minutes then pour the mixture over the chicken breasts pieces. Cover with aluminum foil. Bake for 10 minutes, separate chicken pieces, and cook for another 10 minutes. Uncover. Place chicken under broiler to brown for 3-4 minutes. Serve over rice or thin spaghetti. Serves 4-6.
