EASY BUTTER - BASTED GRILLED CHICKEN
 

2 1/2 to 3 lbs. frying chicken, cut up
1/2 c. butter
1/2 tsp. salt
1/2 tsp. lemon pepper seasoning
1/4 tsp. basil leaves, crushed (if desired)

Before grilling: Heat oven to 350 degrees. Place chicken on large square of heavy duty foil; wrap tightly. Roast in foil for 30 minutes. Melt butter in small saucepan; add lemon pepper seasoning and basil to make basting sauce.

On the grill: Place chicken, skin side up, on the grill 4 to 6 inches from hot coals. Cook about 20 minutes, or until done, turning and brushing often with basting sauce. 4 servings.
