HONEY MUSTARD BAKED CHICKEN
 

3 lbs. broiler-fryer chicken, cut up
1/4 c. honey
1/4 c. prepared mustard
1 tbsp. lemon juice
1/2 tsp. salt
1/4 tsp. pepper
4 tbsp. butter (or cooking oil)

In a 350 degree oven, melt 4 tablespoons butter in baking pan. Arrange chicken pieces in pan skin side down. Sprinkle chicken with salt and pepper. Mix honey, mustard and lemon juice until well blended. Spread half of the honey mixture over the chicken and bake in 350 degree oven for 20 minutes. Turn skin side up and spread with remaining half of honey mixture and bake for 30 minutes more.
