HOMEMADE CHICKEN SOUP
 

1 sm. leftover chicken carcass
8 c. water
1 c. chopped celery (optional)
1 c. carrots
1 med. onion, sliced (optional)
1 bay leaf
1 lg. potato, sliced, or 2 c. egg noodles
Salt and pepper to taste

Simmer carcass 1 1/2 hours in water. Add celery, carrots, onion, and bay leaf. Simmer 30 minutes. Remove remaining chicken from carcass and place meat in broth with vegetables. Add potatoes or noodles, salt and pepper. Simmer another 30 minutes.
