2 tbsp. olive oil 1/2 c. minced onion 12 oz. boneless, skinless chicken breast, cubed 2 c. broccoli florets 1/4 tsp. salt 1/4 tsp. pepper 1 bag pasta (your choice of shape) 1 c. shredded mozzarella cheese Heat 2 tablespoons olive oil in large skillet over medium heat. Add 1/2 cup minced onion. Cook 3 minutes. Add chicken; cook 3 minutes. Add 2 cups broccoli; cook 2 minutes. Add macaroni (or spaghetti) to sauce. Bring to a boil; reduce heat and simmer 5 minutes. Season with salt and pepper. Toss with cooked pasta and mozzarella cheese. |
