2 tbsp. cornstarch 1/2 c. tomato juice 1/4 c. lemon juice 1 (2 1/2 lb.) disjointed broiler-fryer chicken 1/2 c. honey 1 (1 lb. 4 oz.) can pineapple chunks with syrup 2 green peppers, cut in bite-sized pieces Moisten cornstarch with small amount of tomato juice. Add balance of juice and honey; blend well. Add pineapple and green peppers. Pour sauce over single layer of disjointed chicken pieces. Cover and bake at 300 degrees for 1 hour. Remove cover and continue baking until chicken pieces are tender and glazed. Serves 6-8. |
