5-6 lb. hen DRESSING: 4 sticks or squares cornbread, crumbled 2-3 slices brown toast, diced 1 c. finely chopped celery 1 med. onion, minced 1 tsp. poultry seasoning 1 egg 1/2 tsp. salt 1/4 tsp. pepper 2 tbsp. butter, butter 3/4 c. chicken broth or hot water Mix first 8 dressing ingredients (may mix ahead and refrigerate). Just before stuffing, add butter and broth. Mix so all ingredients are moist; stuff loosely into hen. Roast 2 1/2-3 hours at 325 degrees. Double recipe for roast turkey. (May cook hen in crock pot and bake dressing in the oven.) |
