CHICKEN SALTIMBOCCA
 

6 lg. chicken breasts
6 thin sliced boiled ham
Shredded Mozzarella cheese (to taste)
1/2 tsp. dried sage
1/3 c. fine dry bread crumbs
2 grated Parmesan (2 tbsp.)
4 tbsp. butter, melted

9 inch pan at 350 degrees for 40 to 45 minutes. Pound breast out, working from center out, with meat mallet until approximately 5 x 5 inches. Place ham slice and Mozzarella cheese on each cutlet, cutting to fit and add a dash of sage. Tuck in sides, roll up jelly roll style, pressing to seal well. Combine bread crumbs and Parmesan cheese. Dip chicken in butter then roll in crumbs. Place in a shallow baking pan.
