2 lbs. boneless, skinless chicken breasts
1/4 c. honey
2 tbsp. prepared mustard
1 tbsp. soy sauce
Mix honey, mustard, soy sauce and garlic. Pour over chicken breasts and cover tightly in a food storage bag or in a microwaveable dish covered with plastic wrap. Marinate in the refrigerator for several hours or overnight.
One hour before serving, remove chicken from the refrigerator and let stand at room temperature. Microwave covered with vented plastic wrap for 15 minutes on medium high, turning twice.
You can also fry the chicken breasts in a non-stick pan for 10 minutes on each side. (2-4 servings)
