6 c. cooked chicken, turkey or shrimp, cubed 2 (8 oz.) cans seedless grapes, drained 2 c. sliced celery 1 can pineapple chunks, drained 2 c. toasted almonds 3 cans water chestnuts, drained (sliced) 1 can mandarin oranges, drained 1 (8 oz.) jar cashew nuts Combine above ingredients, except cashews. DRESSING: 3 c. mayonnaise 1 tbsp. curry powder 2 tbsp. soy sauce 2 tbsp. lemon juice Blend dressing thoroughly and let stand 2-3 hours. Blend again and add to salad. Toss gently and add cashew nuts on top. |
